My love of the Instant Pot just grew a little more! Of all the things I love to cook in the Instant Pot, my favorites are some of the most basic things. Hard boiled eggs, shredded chicken, homemade broth, and now baked potatoes!
The Instant Pot makes super quick work of tasks that can sometimes be time suckers. Homemade stock or broth, for example, doesn’t have to cook for hours on end when you have an Instant Pot handy. I also love it for meal prep sessions, because I can have it going while getting other tasks like chopping veggies out of the way.
I wanted to try baked potatoes because my husband loves them and I thought they would make a nice hearty lunch for him. Whenever I have made ahead lunches that he will eat, it’s a major win. Baked potatoes are excellent for meal prep lunches best because they are filling, loaded with fiber and nutrients, and are easy to reheat. One batch of these baked potatoes lasts the week and can be paired with leftover meat, chili, salad, or really just about anything!
So How Do You Make Baked Potatoes in the Instant Pot?
Well, it really couldn’t be easier…simply place your scrubbed potatoes on the trivet with a cup of water in the bottom of the pot. Also be sure to prick the potatoes with a fork first. Then just cook for about 12 minutes and done!
I wrap them individually and store in the refrigerator so they are easy to grab when packing lunches.
Ideas for Meal Prep Lunches with Baked Potatoes
Serve with chili and cheese – we like to pour the chili on top of the potato with a sprinkling of shredded cheddar.
Top with roasted veggies, some butter, and salt and pepper.
Make a taco boat by topping with taco meat and your favorite taco fixings.
Adding Sloppy Joe meat makes a delicious and hearty meal.
Serve it along with a small salad and/or cup of soup.

- 6 medium russet potatoes

Wash and scrub the potatoes. Prick each potato with a fork 4-5 times. Pour 1 cup of water into the Instant Pot.

Place trivet in the pot and arrange potatoes on the trivet. Seal lid and set for 12 minutes on Manual setting.

When cycle is complete, allow 10-15 minutes natural release. Remove lid and potatoes from the pot. Serve immediately or let cool and refrigerate. Reheat as needed. Potatoes will keep for 3-4 days in the refrigerator.
